What you’ll need
INGREDIENTS
1kg SunPork Fresh Foods Pork Mince
1 pack Three Aussie Farmers Farmhouse Style Sausages, casings removed
1 Tbsp. oil
1 onion, finely chopped
2 garlic cloves, minced
½ Tbsp. salt
¾ Tbsp. pepper
2 Tbsp. fennel seeds
¾ cup apple, finely diced
4 sheets puff pastry
1 egg, beaten
2 Tbsp. black and white sesame seeds
How to make it
Preheat fan-forced oven to 180°C.
In a large fry-pan over a low-med. heat add oil, onion, garlic, salt, pepper, fennel seeds, and apple. Cook for 7 mins until the apple has softened, then set aside and let the mixture cool slightly.
In a large bowl, combine the pork mince and sausage meat. Add the apple mixture, then mix until combined. Cover and refrigerate e for 1 hour until firm enough to handle.
Place the mixture in the middle of a sheet of pastry and mould into a sausage shape. Cover with pastry, making sure to seal the edges well. Brush all over with egg, then sprinkle with sesame seeds.
Create 3 small slits in the top of the pastry, place in the oven and cook for 45 mins, or until the internal temp reaches 70°C and the pastry is golden brown.
