Spooketti
Get ready for a frightfully fun dinner with Spooketti! This spooky dish combines delicious meatballs with a ghoulish twist, perfect for a Halloween dinner.
¼ cup fresh parmesan, finely grated, plus extra for serving
1 egg
6 garlic cloves, minced
1 tsp. red pepper flakes
1 tsp. oregano
1 brown onion, finely chopped
400g canned crushed tomatoes
1 bay leaf
Oil
Salt and pepper, to season
100g mozzarella, thinly sliced and cut into small circles
6 black olives, thinly sliced
How to make it
Cook spaghetti according to pack instructions. Drain and set aside.
In a large mixing bowl, combine the pork mince with breadcrumbs, parsley, parmesan, egg, garlic, red pepper flakes, oregano and season with salt and pepper. Mix until everything is just combined, then shape into golf ball size meatballs.
Heat oil in a pot over a med. heat. Add the meatballs and cook for 10 mins, rotating often until browned on all sides. Once browned, transfer to a plate and set aside.
In the same pot, add onion and cook for 5 mins until softened. Add crushed tomatoes and bay leaf then season with salt and pepper. Bring the sauce to a simmer before adding the meatballs back to the pot. Cover and leave to simmer for 8–10 mins until the sauce has thickened.
Add the cooked spaghetti to the sauce and mix until all the pasta is coated in the sauce.
Transfer into a serving dish, placing the meatballs on top. Place a mozzarella circle on each meatball then add a black olive slice.
