How to make it

  1. Pre-heat fan forced oven to 150⁰C.
  2. Prepare the ham by carefully removing the rind, keeping as much of the fat on as possible. Score the fat in a diamond pattern about 1cm deep and wrap the bone end in foil to protect it from burning.
  3. Prepare glaze by combing marmalade, mustard, sugar, pomegranate, soy sauce, cinnamon, star anise, orange zest and orange juice to a saucepan and simmer over med. heat until it starts to thicken.
  4. Place ham onto a rack to elevate it off the baking tray and pour boiling water into the bottom of the tray.
  5. Baste with glaze and place into the oven for 2 hrs.
  6. Continue to baste the ham every 10-15 mins, rotating the ham to ensure even colouring.
  7. With 1hr remaining. Place slices of orange over the top of the ham and continue to baste.
  8. Remove from the oven, brush with glaze and allow to stand for 15 mins.
  9. Serve and enjoy!
