How to make it

  1. Pre-heat fan forced oven to 180°C.
  2. Heat oil in a large fry-pan over a med-high heat. Add pork and cook for 4-5 mins until it starts to brown. Transfer to a lined baking tray, reserve the pan, and place in the oven for 10-15 mins or until internal temp. reaches 63°C.
  3. In the reserved pan on a low-med heat, add garlic, rosemary, and sage, and cook for 1 min until fragrant. Add the wine and cook for 1-2 mins, using a wooden spoon to scrape the bottom of the pan.
  4. Add chicken stock and heat through, then add the cream and stir. Bring to a gentle simmer for 5 mins until the sauce has reduced slightly, then season to taste.
  5. Place pork on a serving dish along with mashed potatoes and steamed vegetables before pouring over the sauce.
  6. Serve and enjoy!
