Honey Mustard Glazed Pork

What you’ll need
INGREDIENTS
4 SunPork Fresh Foods Pork Loin Steaks
500g baby yellow potatoes, quartered and rinsed
2 Tbsp. butter, divided
2 Tbsp. oil, divided
1 tsp. lemon juice
¼ cup honey
⅓ cup whole grain mustard
1 tsp, smoked paprika
Salt and fresh cracked pepper
Sliced spring onions, for garnish
How to make it
Boil the potatoes in salted water for 8 mins. Drain and set aside. Meanwhile, pat dry and season pork chops with salt and cracked pepper on both sides.
In a small bowl, combine mustard, honey, paprika, lemon juice and mix until smooth.
In a large fry-pan over med heat, melt 1 Tbsp. butter with 1 Tbsp. oil and fry potatoes until golden with a nice crust, tossing regularly. Remove and set aside.
In the same pan, melt remaining butter with oil and cook pork chops for 3-4 mins on both sides.
Lower the heat and pour the honey mustard sauce over the pork. Let the sauce reduce for 1 minute then stir in potatoes and toss to coat.
Garnish with fresh sliced spring onions and serve. Enjoy!
